Rippa Dorii Verdejo Organic 2022

This wine comes from a deep selection of the own vineyards of Torreduero, Los Curas, and Hornillos, where poor and gravelly soils with significant limestone outcrops prevail at medium and high altitudes. Its production is carried out with strict cold control. After a long maceration, a natural settling is performed to ensure the start of fermentation without passing through any filter and to keep the must alive and free of impurities. Fermentation is spontaneous, and gentle punch-down work is carried out on the finest lees to seek more complex aromas, greater richness, and volume in the mouth. It undergoes barrel fermentation, which adds to the final wine blend.
